Burger Project swept up 2015's 'best Australian burger café', so you know the eats here are going to be awesome. They take their burgers seriously, with 100% of their beef coming from Cape Grim, Tasmania. – the best recipe for quality burgers. Their classic cheeseburger is where it's at, though – just a juicy beef patty, cheese, onions, pickles, tomato, fresh lettuce and plenty of secret sauce.

2. Katsu Chicken Burger, Thirsty Bird

At Thirsty Bird, traditional Buffalo-style crispy battered chicken is at the core of every item on the menu. Slow cooking is the name of the game here – the meat is first seasoned in salt, garlic and herbs, then air dried for 24 hours for extra crispness. Lastly, they coat the chicken with their house mix of flour and spices, dip it twice in a buttermilk bath and deep fry it till it's golden and crunchy. Our favourite is their Japanese-inspired Katsu Chicken Burger, breaded with panko and slathered with kewpie mayonnaise and fruity tonkatsu sauce.

At Smashed Burger you will find the tenderest meat ever. What's their secret? It's in the name with this one – they smash it. First they go to town with a tenderizer, slow roast it for half a day, and then give it a final smash on the griddle as it's grilling.  But it's not just about your beef and chicken regulars here. You'll find pork and lamb, vegetarian-friendly-falafel and even a bit of salmon. We love the Lamb Smash, where rich lamb is topped with red onion, rocket, tomato, bacon and a creamy yoghurt sauce.

4. Hamburgesa, Barrio Cellar

 Chill out and enjoy Barrio Cellar's burgers. This late night tequileria and eatery serves Mexican and Mezcal street food, including burgers, botanas (snacks) and quesadillas. Try their Hamburgesa, a cheeseburger with red onions, pickled jalapeno, chimichurri mayo and chipotle chilli mustard. Or kick things up a notch with their innovative Sweet Bacon Blue Burger, with a premium pasture-fed beef patty, bacon, dulce de leche and blue cheese mayo.

Ze Pickle's Sydney outpost features top-quality burgers made with Wagyu beef. This exclusive Japanese breed has higher level of fat marbling than any other cattle, making the meat extra rich and juicy. The most popular choice here is the Chee-Ze – a bun filled with a hand-pressed Wagyu beef patty, maple-smoked bacon, fried onion straws, cheese, salad leaves and tomato, all covered with the home sauce.
