1. Spaghetti Bolognese
Bolognese. Probably one of the first dishes you learn to make as a kid cooking at home or when you go off to college, this is a staple dish in most Italian restaurants. However, it's one that comes with infinite variations and apparently there is no one authentic recipe. It's a dish that can be created in many different ways. At Vapiano, the Bolognese sauce features carrots and cherry tomatoes, which would be an absolute no-no for another Italian chef. But hey, variety is the spice of life, so try out some different bolognese dishes and see which you like the best.
2. Bucatini All'amatriciana
The classic red pasta sauce of all'amatriciana is always popular. At Rococo in St Kilda, the sauce has plenty of flavour thanks to the combination of bacon, tomato, parmesan and garlic. This is enhanced by the addition of chilli and parsley, so it's got some kick but without being as spicy as the arrabiata.
The amatriciana sauce has its origins in Amatrice, in the Lazio region of Italy, and there it's often cooked with cured pork cheek rather than bacon, and with pecorino rather than parmesan. This is a great choice for when you want some Italian comfort food, along with a nice glass of red!
3. Spaghetti Carbonara
No Italian menu would be complete without the addition of one of the world's most popular Italian pasta dishes - Spaghetti Carbonara. At Bay 101, the spaghetti is served having been tossed together with eggs, parmesan and pancetta and it's one of the most frequently ordered items on the menu.
4. Linguine Pescatore
For anyone who loves seafood, the Linguine Pescatore is a pasta dish that has to be tasted. At 400 Gradi, the linguine is served with a mix of clams, prawns, mussels and scallops in a napoli sauce. Take a mouthful, close your eyes and you could imagine yourself to be sitting at a restaurant in the Gulf of Naples, watching the azure blue waters of the Mediterranean.
5. Veal Tortellini Alla Panna
Tortellini are ring-shaped pieces of pasta stuffed with meat or cheese and they're also known as ombelico, meaning belly button. They come from the Emilia region of Italy, but now, of course, are eaten the world over.
Veal's a common ingredient in Italian cooking and at Caffe Notturno it's served stuffed in tortellini, along with a cream-based sauce that's enhanced with mushrooms, parmesan and spring onions.
