Despite its humble origins and simple nature, pizza is one of the most ordered dishes in the world. Every country has their own version, with almost every takeaway and restaurant offering it up one way or another. And it's easy to see why. What could be better than a fresh dough stretched to a thin sheet, baked in a traditional brick oven for that crispy, bubbled texture? Not much, if you ask us.

Ask how the perfect pizza should be cooked and everyone has a different opinion – even its creators can't agree,  every village in Italy seems to have its own idea about what makes an impeccable pizza.  In its hometown of Naples, they like to keep things simple, so it's the margherita you'll find in most pizzerias, topped with tomatoes, cheese and a sprinkling of basil leaves.

In Rome, it's the pizza bianca that's famous. This 'white pizza' contains neither of pizza's two traditional toppings – cheese with a tomato sauce. Instead, expect to see locals feasting on a thin, pale dough drizzled with olive oil and rock salt.

A foodie legacy

It's not surprising that there are so many varieties of pizza when you look at its rich and diverse history. The kind we know and love today was rustled up in Naples, when tomato sauce was added to the focaccia bread in the late 18th century. However, its origins go way back.

The word pizza itself was first used as far back as AD 997 in central Italy, and it's well-documented that the Romans added toppings to flatbread to feed their armies. There's even evidence in the fossil record of other ingredients being added to bread in Greece. And over in Sardinia, archaeologists have found flavoured bread baked over 7,000 years ago. It's safe to say we've been loving pizza for quite some time.

Pizza for every palate

While pizza parlours throughout Italy remain passionate about upholding tradition, chefs throughout the world have been putting their own spin on this delectable dish for generations. At Bondi Pizza, try their 12-inch chilli prawn and chorizo version – topped with authentic Roma tomatoes and Italian buffalo mozzarella for a classic touch, with the juicy seafood and spicy sausage really bringing this wonder to the next level.
