Saké Melbourne: Saké Jr restaurant profile

You've probably heard bits and pieces about Saké, the buzzy Japanese restaurant famed for its sake bombs and teriyaki burger balls. Well, now we can treat ourselves to a new culinary experience from its sibling, Saké Jr. Offering a fresh, healthy take on Japanese food, Melbourne lunches will never be the same again thanks to this new fast-casual eatery.

The gold-star Saké standard

Wagyu beef tartare and salmon belly nigiri draw the Aussie crowds into Saké Restaurant and Bar. This flashy restaurant is the brainchild of Sydney Chef Shaun Presland, with the Melbourne branch helmed by Nobu alum Rose Ang. Sleek and stylish, it provides an upscale take on Japanese cuisine which puts fresh ingredients and precise sushi cuts at the forefront.

That same attention to detail can be seen in the restaurant's little brother, Saké Jr. With light layers of flavours and sustainably sourced meat and produce, Saké Jr is Melbourne's new go-to at lunchtime. Beautifully presented Japanese food is prepared fresh to order in an open kitchen. Even the packaging is recyclable, so you can pat yourself on the back for doing your bit for the environment.

All ingredients are billed as being free of GMOs and preservatives, so you won't be putting any nasties in your bod. The Japanese fried chicken is free range, and the beef is both grass fed and dressed with delicious Korean gochujang.

Even picky eaters will be pleased with these DIY dishes. The main draw at Saké Jr is the customisable build-your-own bowls. You can pick and choose from all the healthy building blocks and lay on the tasty umami-rich fixings. For the base, choose between udon rice noodles, mixed greens, rice or bao buns. Proteins include cooked-to-perfection sesame pork, miso-glazed cod or crispy tofu (among others). Load up on tasty veg like steamed edamame, Brussel sprouts or charred corn, and then dress up your creation with lashings of wasabi ginger salsa or apple soy sauce. You can go as minimalist or as nuts as you like with the toppings – one of the many great things about Saké Jr.

Finish the meal

Let's talk more about those toppings. What really sets Saké Jr apart from the competition is its range of condiments, dressings and toppings. Garnish your bowl with everything from chilli threads to toasted nori or crushed wasabi peas. Add your own unique combination of vitamin-filled pickles, fiery house-made kimchi, fresh ginger and a daikon and carrot blend to create a truly individual dish. Don't forget the chilli oil if you like to bring a bit of heat to the table. You'll be able to wash it all down with the restaurant's selection of iced teas and sparkling juices. The 'Hero' blend is particularly refreshing, consisting of organic sparkling cranberry and guava juice.
